Duck Fat Fries

Description

Fresh sliced potatoes tossed in duck fat, garlic, rosemary and flake salt.

Ingredients

  • 4 Russet potatoes, sliced into fries
  • 2 Cloves Garlic, minced
  • 1 t chopped rosemary
  • 1 T Duck fat, melted
  • 1 T Avocado oil
  • 2t + Flake salt
  • 1 t chopped parsley for topping

Instructions

  1. Chop potatoes and place directly into ice water for 30-40 minutes.
  2. Preheat grill to 425F
  3. Combine duck fat, oil, rosemary, and garlic in a big bowl. Remove potatoes from ice water and dry thoroughly. Toss potatoes into the duck fat mix and place on parchment lined baking sheets in a single layer. Sprinkle salt to taste.
  4. Cook for 30 minutes, flip fries, and cook for an additional 15 minutes until golden and crispy. Dust with parsley. Wash hands, and serve.
