Personal sized apple pies with puff pastry crusts smoked with apple pellets and topped with cream

Ingredients
- 5 medium sized apples, peeled and chopped into cubes
- 1 pillsbury crescent sheet
- 2 T Butter
- ⅓ C Brown sugar
- 1t Cinnamon
- Zest of 1 lemon
- 1T flour
- 1t Vanilla bean paste
- 1 Egg, beaten (for wash)
- Crystal sugar for dusting
Instructions
- Preheat the smoker to 350F
- Melt the butter in a pan over medium heat and add the apples, cinnamon, zest, and sugar. Cook until apples become just tender (about 8 minutes).
- Stir in the flour and cook for an additional 1-2 minutes.
- Remove from heat and add the vanilla. Set aside.
- Roll out the puff pastry to ¼ in. Use a cup or a cookie cutter to make 8 circular cut outs.
- Place one circular cut out in the base of each croquette, fill with ¼ of the filling, and top with a second puff pastry round.
- Brush with the egg wash and sprinkle with the sugar.
- Place directly into the smoker and cook for 25-30 minutes or until puff pastry is golden and apples and fork tender.
- Serve hot with fresh whipped cream
