Citrus Smoked Salmon

Ingredients
- 4 Salmon Fillets, skin on
- 2–4 Grapefruit Slices, thin
- 4–6 Lemon Slices, thin
- 1 T Blackened Saskatchewan Seasoning
- 1 T Summer Shandy Seasoning
- Spritz EVOO if desired
Instructions
- Preheat Smoker to (325F) (use a mild wood like apple, cherry, or pecan)
- Remove any excess moisture with a paper towel, and generously sprinkle the seasoning on the fillets
- Lay the Citrus slices directly on the grates and gently top the grapefruit with the blackened Saskatchewan covered fillets and the lemons with the Summer Shandys.
- Close the lid and cook for about 25 minutes or until just* done. Do a light spray of evoo over the fillets and let them sit in the smoker an additional 2-5 minutes. This will give them a nice shine and a tiny crust. (A spray like PAM works too, but get the olive oil)
- Aint no Salmon like a smoked Salmon!
